Keeping things simple can get you great results. This Mushroom and Asparagus Pasta is a great simple and quick healthy lunch fix.
I signed up for the London Blogger’s 10 day challenge and it has been a shame that I totally fell off the wagon on day 3. I kept trying to get back on it but haven’t been able to keep it up. Damn. I totally underestimated this challenge. Needless to say, I am disappointed at myself. But. There is no point crying over spilt milk, so here I am, trying to get back on the horse.
After all, as Napoleon Hill said – “Before success comes in any man’s life, he’s sure to meet with much temporary defeat and, perhaps some failures. When defeat overtakes a man, the easiest and the most logical thing to do is to quit. That’s exactly what the majority of men do.” Well, I am not a quitter. I am not most men. (However what I am is a sucker for inspirational quotes, which I definitely need to get under control because I am not a fortune cookie.)
Goalify just sent me some words of encouragement on Instagram. How cool is that?
We all set out to meet our goals with great expectations. Nothing wrong with that, of course. If you’re not careful, though, you end up forgetting certain realities that may hinder you from meeting your goals. I thought it would be easy and that I’d have a surplus of time to get the challenge done. The reality that I conveniently dismissed is that you can’t just go into something like this without a plan, and when you force yourself to write it actually becomes a lot harder to do. I end up over criticising my work and fail even before I begin. I really am my own worst bully!
Simplicity is Key
So here I am again, and this time, I’m keeping to a plan and keeping it simple. Much like with my cooking, sometimes I tend to get over excited about all the ingredients and recipes that I want to try, which eventually ends up with me stressed over what I want to eat and so hungry I end up eating a pack of oatcakes. Delicious as they are, they just won’t do. This whole cycle of excitement and stress is so counterproductive.
In keeping with simplicity, I’m sharing this amazing 10-minute Mushroom and Asparagus pasta that has become one of my go to’s for a healthy, delicious, and simple lunch time meal for when I have no time to waste but can’t compromise a good feed.
Well won’t you look at that. A decent post! As much as I’m ashamed about falling off the wagon I’d be more disappointed with myself if I quit. Hopefully, this time I keep it up!
Anyway check out the recipe below and let me know what you think!
- 1 cup of pasta ( I used wholewheat farfalle)
- 1 tablespoon butter
- 1 cup plain greek yogurt
- 1 clove garlic, minced
- 1 tsp chili flakes
- 1/2 cup sliced mushrooms
- 1/2 cup asparagus, chopped
- salt and pepper
- Parmesan, to serve
- Prepare the pasta as per package instructions. Drain and save a bit of the starchy water.
- Sautee the garlic, chili flakes, and vegetables in hot olive oil, seasoned with salt and pepper.
- When vegetables are soft but not wilted, add the yogurt and simmer with the vegetables for a minute.
- Add in pasta and toss everything together. Add a bit of the starch water to to keep the pasta just fully coated with the sauce.
- Top with parmesan and parsley. Serve immediately.
- Greek yogurt is a great substitute for sour cream. Try it sometime!
